Recipe is really easy - no sieving needed (unless you want to!)
1 cup SR flour (1cup is about 120g)
1 cup caster sugar
1 teaspoon of baking powder
1/2 teaspoon of cinammon
1/2 teaspoon of mixed spices
1/2 cup of melted marg
2 eggs (beaten)
2 cups of grated carrot.
Mix all the dry ingredients together and then add eggs & marg - mix well. Stir in carrots.
Bake in 8inch tin for 1 hour (Gas mark 4 / 180 degrees C). Line tin well with baking paper
Icing
3oz butter
3oz cream cheese
1/4 teaspoon vanilla
6oz of icing sugar (or as much as you need to make the icing not runny)
Mix together cheese, butter and vanilla. Add icing sugar (gradually) and mix well. Spread over cake when cool
this doesn't look too complex....I might actually be capable of pulling this off! won't be as good as the ones I made the other week of course...
